breakfast cookies


I take my calling as a homemaker seriously. I am continually (and shamelessly) gleaning ideas, recipes and tips from every source available. I love magazines, books and friends advice but the one thing I turn to everyday? The Internet. How did we get information before this magic? And truly some of the best blogs are those written by "moms of many". The homeschooling women with more than five kids. These gals don't have time to mess around. They need to get stuff DONE. And if you want the straight scoop on potty training, a recipe that feeds 12 people for $1.87, or a phonics program that works? Go ask her. And if you don't know a woman like that IRL (in real life) you can search the Internet-there's a few out there that blog (must be between 2 A.M. feedings!?) One I really like is http://bakersdozen.typepad.com/ and she had a great idea for "breakfast cookies". She came up with a simple, nutritious breakfast she could hand her little ones on a busy morning. I adapted it a bit, at her suggestion (adding wh. wheat flour and flax). We made some today and they were a HUGE hit. The test of any recipe is "Will Caleb eat it?" and he loved it!

So here you go-you can change/add whatever your children like (I put Craisins in half the batch for Sam and Josiah). They freeze well in a ziploc baggie, just take some out the night before.
BREAKFAST COOKIES

Cream:
1 c. butter
1 1/2 c. natural peanut butter
2 c. sugar (white or brown) I might try substituting honey next time!

then add:
4 eggs
1 T. vanilla
3/4 c. milk

Combine separately:
2 c. flour
1 1/2 c. whole wheat flour
1/2 c. golden seed milled flax
2 t. baking soda
1 t. salt
4 c. oats
3/4 c. sunflower seeds

Combine wet and dry ingredients. Mix VERY well. Spoon onto baking sheet-I used 2 scoops from the pampered chef small scoop. You want them large, since they are breakfast cookies. They are cake-like in texture and don't spread out too much. Bake at 350 for about 14 minutes.
